My mother-in-law loves to bake. She bakes so well and we all love her Chocolate Moist Cake, Macaroons and Cassava Cake. Now that she retired from her job, she kept herself busy trying out new goodies to bake. I was lucky to get the chance to have a hands-on baking lesson with Mommy this morning.
The Coconut Macaroons was my first baking experience. Sometimes, it turns out good; most of the times, it disappoints me. But seeing how Mommy bakes well, it inspires me to practice more.
‘Ika nga, “practice makes perfect… but nobody is perfect… so why practice?” (Got this line from Ai-ai’s movie.) Joke!
Back to my baking topic, Mommy readied all the ingredients when I arrived. Each ingredient was already measured per cups. She placed two mixing bowls on the table — one for her and one for me. I felt like enrolling in a baking session for free!
She first placed the grated cassava in each bowl. We used bare hands to pick dirt from the grated cassava. Of course! Our hands were clean.
Next, she poured the sugar and the coconut milk as I beat the eggs for the mixture. Then she gradually poured the remaining ingredients — coconut meat, condensed milk and cheese — one at a time while giving me tips on how to modify the recipe according to my taste.
Baking is not her business but her passion. Countless times, friends would request her to bake the popular dessert to sell for parties and countless times she would decline because of her job.
And our finished product! Ehem… It was still Mommy’s magic hands that did it. I just mixed the ingredients.


i miss this! i love baking too, but since hubby does not eat sweets i avoid baking now since i will eat all that i will make, so i just buy a slice or two
hi Ris, sweets such as this are way to cheap here in US that is why a lot of of people here are overweight because fast foods, deli and what have you are cheap, and if I bake and sell in competitive price, I would lose money, I will earn a lot more from blogging, and i exercise more coz my blog is about outdoors
